Did you know that May is National Salad Month? I’m celebrating by sharing my favorite summer salad recipe. I strongly believe that the best salads contain mixed greens and strawberries, and this one has both. It’s also topped with lemon and garlic marinated grilled chicken tenders, which are the star of this summer salad. Check out the recipe below!

Lemon and Garlic Marinated Chicken Tenders

Ingredients:

Instructions:

  • Place chicken tenders in a glass bowl or a ziplock bag and cover with Tessemae’s marinade. Place in refrigerator to marinate for at least 1 hour (I marinate mine overnight for more flavor).
  • When ready to cook, remove from marinade and place on a pre-heated electric skillet heated to 300 degrees and sprayed with avocado oil. Season with a pinch of salt and black pepper.
  • Cook for 5-6 minutes per side, until chicken is browned on the outside and cooked through.

Lemon Garlic Chicken and Strawberry Salad

Ingredients:

Instructions:

  • Place mixed greens in a large bowl.
  • Cut cucumber into bite-sized pieces. Place on top of greens.
  • Cut bell pepper into bite-sized pieces. Place on top of greens.
  • Cut tops off of strawberries and cut berries into quarters. Place on top of greens.
  • Thinly slice about 5 slices off half of a red onion. Separate onion pieces and place on top of greens.
  • Chop or break walnuts into pieces and place on top of greens.
  • Slice chicken tenders and place on top of salad.
  • Drizzle with Tessemae’s Organic Lemon and Garlic Dressing.
