On Tuesday night, Jeff requested hamburger hash for dinner. This is one of my favorite comfort food treats, and it is Whole 30 approved! I typically just make this with hamburger meat, onions, and potatoes, but this time I added yellow squash and zucchini to get some veggies into our meal, and it was so good!
Here’s what you need:
1 pound ground chuck
3 or 4 russet potatoes, peeled and chopped
1/2 white onion, dived
1 yellow squash, chopped
1 zucchini, chopped
Start by peeling and chopping the potatoes into small squares. Place the potatoes into a large pot and boil for 2 minutes to soften. After 2 minutes, remove from heat and drain potatoes. Set aside.

Brown the ground beef on medium high heat. Season with salt, pepper, and garlic powder.

Turn heat down to medium. Add in the chopped onion. Stir together and cook for a few minutes, until onions start to soften.

Add chopped potatoes. Stir mixture and cover. Cook for 5 minutes.

Add squash and zucchini. Add a little more salt, pepper, and garlic powder. Stir, cover, and simmer for 10 minutes.

When potatoes and squash are soft, it is done!

Enjoy!
This is a super easy, quick meal – perfect for a busy weeknight!
